Baked Eggs with Spinach, Tomato and Peppers


Since joining Slimming World (the grand total of 6 days now woo!) , I'm slowly but surely adapting my meals to coincide with Slimming World's plan. One of the first tips my group leader gave was to meal plan ahead, so when I was home, I started thinking of different ideas and looked up some recipes and this Baked Eggs recipe caught my eye - we've decided that throughout the week we'll cook easy meal, and on days where I have more time, usually the weekend, we'll try out new recipes! I'm not big on vegetables, but this recipe hid in spinach, peppers and tomatoes which I would never normally eat! It honestly was so delicious - even though the picture isn't greatly Pinterest - worthy, the dish was gorge! I've shared the original recipe from the Slimming World website below, and my very slightly adapted version (to accommodate vegetarians!)   • 400g new potatoes, thickly sliced
  • Low-calorie cooking spray
  • 1 onion
  • 1 garlic clove
  • 1 orange pepper
  • 400g can cannellini beans
  • 400g can chopped tomatoes
  • 300ml passata
  • 1-2 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper
  • 100g spinach
  • 4 medium eggs
  • A handful of basil, to garnish
To make boil potatoes for ten minutes, then drain. Spray a large frying pan with low - calorie cooking spray - add onion, garlic and pepper and stir fry for five minutes. Stir in the potatoes and beans, then add the tomatoes and passata. The original recipe states to add Worcestershire sauce at this point, but I added it at the end due to cooking the dish veggie, then incorporating meat into my serving!  Season and simmer for 10-12 minutes, or until thickened. Stir through the spinach and allow to wilt. Make 4 shallow indents in the mixture and crack an egg into each one. Cover and cook gently for 5 minutes, or place under a medium-hot grill, until the eggs are set to your liking. During this time, I put some bacon medallions without the fat into a pan with low - calorie cooking spray and cooked. Then to serve, I chopped the bacon and spooned into the mixture, then added the Worcestershire Sauce, with salt & pepper on top.
